which stout for brownies?

    I have the following on hand, and would ideally like something that will actually give some beer notes to the brownies, in addition to enhancing the chocolate.

    Founders IS
    Old Raspy
    Highland Black Mocha
    Samuel Smiths chocolate
    Samuel Smiths IS
    Full Pint Night of the Living Stout

    Anyone have recommendations among those? Thanks!

    are you looking at making brownies with beer in them?

    Yeah - if you are talking about using them to make the brownies, then I'd go with the most economical - probably Old Rasputin or Expedition. Storm King would be interesting with the hop flavor though.

    Reduce the beer first, whichever you decide to go with.

    Interesting...I never though about doing this. Would definitely intensify the flavor though!

    And yes, I'm talking about making brownies with stout in place of the water/liquid.

    But that would mess up the moisture content that was figured in to the ingredients. I have made brownies several times with beer and never reduced it.

    Well, since you have a half a dozen options, I would say you try 6 different batches and report back here what your findings are for each.

    I prefer to reduce beer for cooking to remove the water. You get to keep the flavour profile without adding unnecessary liquid to the mix. I´ve certainly never added water to a Brownie recipe.

    Also, if you´re making ice-cream with beer, especially stouts, then it makes even more difference if you reduce the beer first.

    Good suggestion, I'm currently working my way through the options, although so far, the results have not been very beer-y. One can only make so many brownies in a short span though, so may take a while to finish the rest off. I'm also going to pick the best of the bunch and try a batch after reducing the beer.

    Founders IS -not tried yet
    Old Raspy -best boost to the natural chocolate so far, made the brownies almost black, and got a little hint of beer
    Highland Black Mocha -not tried yet
    Samuel Smiths chocolate -boosted the natural chocolate of the brownies, but no beer flavor
    Samuel Smiths IS --boosted the natural chocolate of the brownies, but no beer flavor
    Full Pint Night of the Living Stout -not tried yet
