White Labs High Gravity Yeast Question

    I purchased a vial of HG yeast the other day from my local store and totally didn't check the expiration. It's been in the fridge the whole time and it says it expired on 12/31/16.

    Is this likely still good? I'm using it along with Scottish Ale yeast for an imperial stout. I would assum its only 2 weeks after and we are brewing on saturday with it.

    Yer good...make a starter if you're concerned, but with 2 packs of yeast, you shouldn't have any problems with fermentation.

    Yep, just brew a starter with it a few days out from brew day and all will be good. I used 10 month old lager yeast that took 2 days to get going in the starter, but when I pitched that into the next starter it took off like a rocket. Then into the beer afterward as well.

    The best Oktoberfest beer I ever brewed was made with a 10+ month old smack-pack of Wyeast 2633. That smack-pack took a few days to swell up but I made a starter with it and the beer fermented just fine.
