I've seen krausen come in all shapes and sizes, so I've learned not to panic over that kind of stuff anymore. That being said, I can't say I've seen a white ring form in the middle of the carboy like this: Not sure if an infection would start in that area of the carboy, so I'm not sure what it could be. I had proper drying of StarSan for roughly 10 minutes before the end of boiling on brew day. I didn't see any signs of leftover PBW residue either from past cleanings. I should note, I was not aware of the importance of a starter for liquid yeast, so there was quite some lag time before fermentation began (72 hours). It wasn't until day 4 that fermentation really took off like this. Thoughts? RDWHAHB?
Correct - I guess I've just never seen yeast settle like that? I usually see it settle at the bottom and slowly transition to krausen at the top. Thanks Vike.
On a side note - any chance I should be worried about the lag time? I'm thinking my overly excessive sanitizing habits should prevent any kind of threat from infection, but I've heard slow lag time can cause yeast to create some off-flavors. That true?
My carboysss have that same shelf. I hate them because its one more nook to try to scrub. When I cold crash my carboys they really collect the yeast.
I wouldn't worry about it. I think the ring looks very healthy. I've massively underpitched once or twice and you don't get a very good krausen ring. Lag times can be up to 24-36 hours without a sweat. When cleaning tie a knot in a strip of rag and throw it in the carboy. Fill it with oxyclean and let it soak overnight. Empty 80% of the oxyclean solution out. Turn your carboy sidewaysss and swirl like hell.
The last byo or zymurgy had blueprints for a drill powered cleaning wwand that I will be building soon. I look forward to not having to swirl like hell anymore and so does my back!
