White stone ipa with waimea hops

    I am going to pitch you all an idea and hoping to get some feedback:
    I got some waimea hops at gabf and have been wanting to make a white ipa for sometime.
    I was planning on using the stone ipa recipe as the backbone as listed here:https://byo.com/stories/issue/item/3125-stone-ipa-clone
    I planned on making the following changes:
    1. Replace centennial hops at 15 min with waimea hops
    2. Replace 2 lbs light dme with wheat die
    3. Replace light lme with wheat lme
    The rest of the recipe would be exactly as listed.
    Other ideas I had which I hoped to bounce off you all:
    1. Addition of flaked white wheat
    2. Addition of orange peel and coriander
    3. Use of Belgian yeast strain instead of English ale yeast
    Any other ideas?
    I definitely still a beginner having brewed 5 batches total with the last 2 being worthy of sharing with friends (though I of course drank it all!), so any suggestions are appreciated!

    What is the defining factor of a White IPA to you? Personally, I think of it as a stepped up Witbier grainbill, using a Wit yeast strain, but with an IPA hop bill. Not really possible for an extract brewer.
    This isn't to say that you can't come close. Use all wheat DME for the extracts, use a Wit strain (make sure you pitch properly and ferment within range), and hop as you intend. I would say that you'll get the most out of your fancy new hops at FO and DH stages. How much Waimea do you have? Hold off on the coriander and orange peel.

    I had a SMASH pale ale with waimea hops the other day. It was interesting...i couldnt decide what it tasted like but it was interesting enough to want more. Very very earthy
