So, I kicked it off last week and then I didn't actually get to brew, so I'll kick it off again this week. Brewing the third rendition of my 100% Brett IPA to dial in the recipe where I want it to be. Just got my new shipment of hops in last week so I'm ready to go. I did get the kegs cleaned and the ferm fridge, also kegged 2 sours. How about y'all?

Brewing a white stout. Also need to check on a pale ale I brewed two weeks ago, pretty sure it's ready to go into the keg for dry hopping.

Kegging a vienna and a festbier this weekend. Plan to lager 4-8 weeks depending on how low my beer supply gets.

Just got in a new 1 BBL fermenter in my brewery (an upgrade to the tiny 1/2 BBL fermenters I had been using) and as soon as my ingredients come in, I will be brewing the 3rd rendition of my 100% Galaxy hop IPA.

Could you post a recipe? I'm interested in a white stout.

i think on monday i'm going to try my hand at brewing my first big russian imperial stout. I'm going to shoot for somewhere in the area of 15% ABV.

This is a majorly revised recipe that I borrowed from elsewhere. I've never brewed this before, but this is what I'm going for:

    Batch Size - 5g
    Efficiency - 68%
    OG - 1.064
    FG - 1.019
    IBU - 31

    85.5% Maris Otter
    5.8% Flaked Barley
    5.8% Flaked Oats
    2.9% Crystal 40
    .50oz Warrior - 60mins
    1oz Crystal - 10 mins
    WY 1318
.5lb - 1lb Lactose (haven't decided yet if I'm going to use a full lb or a half lb)
2 cups or so of cold brew coffee at kegging

I brewed a Belgian with Crystal and First Gold. First time using First Gold. It has some nice sounding descriptors:

Slightly spicy, but smooth, with tangerine, orange marmalade, magnolia and floral flavors - Hop Union

Sadly, the hops in the package smelled like a stale box of Fig Newton cookies that had been sprayed with malt vinegar. I used them any way, but decided not to dry hop with them. The wort smelled ok and didn't smell like stale Fig Newtons with vinegar. Fingers are crossed for this batch.

Since I haven't made an IPA in about three years, that is what I will be brewing tomorrow. Actually it will be an India Red Ale with Golden Promise, Munich, and three crystals. Going with what I know, will be using simcoe, centennial, and cascade. US 05 for the yeast. OG ~ 1.067, 65 IBU, and dry hopped. Definitely fired up to make this Howling Red Moon Ale since there will be a red moon next month!

Got a fresh shipment of grains and hops my LHBS doesn't carry earlier this week and now I'm set to brew my next 10 batches (2-3 months)!

Brewed a Rye and wheat IPA yesterday, brewed an Equinox APA with WLP 644 today as well as a 1 gallon experimental batch with a wild yeast I harvested from wild blackberries in my front yard earlier this summer. Dry hopped an all Calypso hopped IPA a couple of days ago and will be kegging it Sunday as well and bottling a Watermelon and Honey Ale sometime this weekend too...possibly bottle a La Folie clone this weekend too if it's tasting ready (in which case I'd brew up a basic wheat and 2 row wort to toss on the yeast & lacto cake on top of all of that). Gonna brew up my second iteration of a Pinner clone on Monday as well. Damn, looks like I'm gonna be busy this weekend!

Also, I'm wiring the thermostat for my new keezer!

I don't like lactose in my white stouts...it just doesn't fit IMO. I'm also a fan of cacao nibs and vanilla beans to bring out the chocolate flavors of a stout...they blend well with the coffee and flaked barley and oats to trick the palate into thinking its drinking a darker beer.

Love your Beer Baron avatar BTW :grinning:

Sunday I'm doing an oatmeal stout partial mash, and I'll be helping my new brewing partner do his first extract kit (irish red ale). Gonna be a busy day!

No brewing per se, but probably doing some preparations (starter wort production), brewhouse upkeep, miscellaneous planning for upcoming saison and sour.

Making 15 gallons of the APA Saison. Or close to it. Same grain bill, same hops. Fermenting separately with 3726, 585 and 568. I'll add the brett after harvesting the yeasts or maybe just add it directly to the 568.
