Made my starter friday night so I was committed to brew this weekend. 1/2 keg of SNPA kicked so I figured I needed to get something in the fermenter. Brewed my favorite (so far) homebrew of Pliny clone from morebeer. I am getting much more efficient now time wise. I was finished in about 3 hrs not including the starter I made earlier. 30 min. steep then 90 min. brew and cooling then pitching. I have been brewing since May and all my beers have been good to very good. Maybe someday I will mess up and have to dump 5 gallons of work but so far so good!

From a technical standpoint @ModernTimesJacob brews a clone of my Fortunate Islands... haha! Hope it turns out well!

Brewed an old Rasputin (tweaked with Cherrywood smoked malt) clone on Saturday. Hit the 1.090 OG spot on! It's currently chugging away at a nice 64-66 ºF in the basement swamp cooler.

I'll be kegging and dry hopping a Societe The Pupil inspired IPA tonight. 2 oz Nelson and 1 oz Citra for the DH. In total it's 7 oz Nelson, 2 oz Citra, and 2 oz Centennial, entirely from 10 minutes and in. I normally aim for a 4:2:1 ratio when I use these three, but I didn't have as much Citra in the freezer as I thought I did. A little extra Nelson never killed anyone.

@OldSock I brewed your FI clone earlier this summer and it was outstanding. On the books again for next spring!

Started preparing mangos tonight for addition to some lambic I have fermenting right now. Figure I'll start @ 5lbs for 2.5 gallons of brew and add more later before I bottle for some bright fruit flavors.

Glad to hear. I liked it with Conan, I'm interested in doing it with 1318 and 3068 as well. Great place to start for experiments with Southern Hemisphere hops too. Both nice options if you want to do something

Today I'm bottling what I'm calling my Deutsche IPA: it's basically an IPA recipe but with some of those newish German hops (hallertau blanc and hull melon) and fermented with WLP300 Hefe yeast. Looks gorgeous. Can't wait to try it in a week or so. Was hoping to have kegging equipment by now and for this to be my first kegged batch, but that didn't work out.

I'll be racking an imperial stout to secondary today. Well, maybe, I'll be tasting it first and then deciding. Since the lid blew off my fermenter during primary, I'll have to see if anything nasty got in it first, but I'm not too worried. It's an imperial stout I made with Wyeast Irish Ale yeast, and if it does get racked to secondary, it will be going on top of some oak soaked in Jameson. This is a rebrew of the first recipe I wrote myself, but the original was done with extract, and this was converted to an all grain recipe. It tasted pretty amazing going from the kettle to primary, so I have high hopes.

I also need to make a lacto starter for a gose I'm brewing this weekend. I'll probably do that on Thursday.

Just finished the first step of my starter. This yeast blew through the starter in less than 24hrs...OG was only 1.015, but didn't expect it to be quite so quick. I added some Rakau hops when I boiled the wort to help control unwanted organisms, and the combination has a super fruity aroma. Probably add hops again for the seconds step.

I've decided that if the 2nd step turns out I'm going to ferment with it in my upcoming Wet Hop APA. So, I guess it will be a "Wet & Wild" Pale Ale.

First batch ever brewed 8/22. "Hop Head Pale Ale" with extract of course. Hopefully the first of many. The yeasty beasties are swimmin away and things look okay thus far... This was a "house batch" 5 gallon. We're now all looking into individual 3 gallon carboys to do our own batches each week or so.

Pretty much the best use for that hop variety. Not that I'm still a little salty over how my Rakau IPA turned out or anything.

That's why I chose them, trying to get them out of my freezer.

May I ask what fruits you are using? I've done blackberries, raspberries, plums, strawberries, and apricots, all have worked well, with the exception of apricot, I simply failed to add enough of them. However, I am constantly looking for new fruit to add to sours....
