I am brewing another a different saison today. I have brewed a couple and I am going to compare which saison I prefer. The one I prefer will be brewed again only this time I will add brett in the secondary to age and eventually will add peach puree, to make my first sour beer that I am hoping to have bottled and ready to drink sometime in the summer.

Bottled my first batch ever yesterday. A stout with vanilla that was intended to be close to Mean Old Tom from Maine Beer co. Didn't quite hit the flavor profile I was shooting for, but considering it's my first beer, it stayed clean, and it still tastes good, I'm calling it a success!

I want one. I bet it won't fit in my fridge though. How tall is that bad boy?

I had a little extra time today. I rattled off an APA after missing my mash temp (low). I always want to keep the temp of the strike water too low. I paid for it with a thin mash. I'll wish I hadn't bittered the hell out out it in about 6 weeks. Regardless, I needed to add to the pipeline, and it took about 4 hours. I'm looking forward to buying more hops after this one.

Brewed a hazelnut brown ale with brown sugar and molasses, tapped a keg of Falconers Flight single hop IPA, kegged a chocolate vanilla coffee double stout and dry hopped a Citra and Mosaic imperial IPA.

Half of my 10 gallons of Porter I brewed 2 weeks ago will be getting Brett Claus and Orval. Just took the Brett mix starter off the stir plate tonight and turned down the ferm temps to crash for a few days before I rack. Let me guess, you got the idea from @OldSock American Sours book?

I kind of like to have 2.5 - 3 litter, the 5 litter is too much for 5 gallon batch. this monster is 15.5 inches high.

Thanks for the info. It's a PITA to try to make an appropriate lager starter with the 3l flasks. Lots of antifoam and a quick prayer.

Brewed a Trillium Sunshower inspired big saison yesterday. Only hickup was that the wind kept knocking out my propane and kept me from finishing before the Patriots Bears game.

Let me know how that turns out. I did an XPA with all falconers in the boil and thought it was hoppy, but in a generic hoppy sense with nothing really sticking out in terms of flavor/aroma profile. Curious to see if yours is the same.

Yeah...its really not a "single" hop because its a blend. It came out with a citrusy nose but a lot more bitter than others like Citra or Galaxy. I think it has a much more grassy and pine resin flavors than citrus flavors as well. A little generic, but definitely more of a dank hop variety you would find in a PNW IPA. I did it in a SMaSH with Munich. I like it, but so many other single hop IPAs (Galaxy especially) I've done are so much better than this one...glad I tried it to find out for myself though.
