Well, it's Thurs. afternoon and I'm finalizing my Rye Porter recipe, that I'll be brewing Sun. I've got to run to the LHBS later this evening to snag the ingredients.

Going to be about 20% Rye, with GP and Munich as base, and I'll be hopping with Columbus and Willamette. Looking forward to brewing with crystal rye for the first time.

    What's everybody else got planned?

I *should* be dry-hopping my all-Citra this Sunday. Need to take my gravity samples but it's been in primary 1.5 weeks.

Bottling my Golden Promise/Golden Naked Oats IPA, after its been dry hopped with Citra and Amarillo.
Brewing a Ten Fidy-ish clone, but I'm adding 1.5-2 boxes of graham crackers to the mash, throwing some lactose in the boil along with about 2.5 oz. cocoa nibs. When we get to it, I may secondary a portion on toasted coconut. This is an attempt to put my family's 7-layer bar dessert into beer form.

Family in town this weekend, so no brewing for me. I do have the first step of a starter from St Bernardis Pater 6 on the stir plate right now that I will probably step up at some point. My Barleywine I brewed 2 weeks ago is done. 11% ABV. Tastes great. I have it in 2 Better Bottles for head space (I brewed up 6+ gallons of it). Going to rack one into the other for a little bit longer conditioning before I bottle, and taking the remainder into a 2L to force carbonate. My birthday is next Wednesday, and I am drinking that beer on it, dangit! 3 weeks grain-to-glass 11% Barleywine, sure, why not. Last weekend I did my first attempt at Belgian Dark Candi Syrup, and used the syrup still stuck to the pot, some Pils DME, and a few hop pellets to make a small batch, like 1/2 gallon of 1.040 wort that is on Abbey II right now. Probably check on that at some point.

I've got an alder smoked Rauchbier that I should bottle up soon. It doesn't smell good yet. It smells kind of oxidized. It's only been in the bucket for a few weeks. I'll taste it over the weekend and probably get it bottled up anyway. I'd like to brew another nut brown, if time allows it. The first one is down to the last half gallon and is getting really good. It was a fun beer to drink. It had kind of a thin anise taste to it fresh, and it's just getting a great caramel flavor to it.

I brewed a little stout last week, so no room to brew anything more. Gravity readings, drawing samples, and bottling some of the other things in the pipeline needs to happen this weekend.

No brewing, but I did order another 50 lb bag of base malt today. I need to prep another batch of La chouffe ipa clone and brew it on one of those rare 50 deg. days before January sets in. The long winter is upon us.

Brewing an oatmeal stout tomorrow. It will have about 16% flaked oats with a target OG of 1.052. I haven't done one of these in a couple years (I like to brew too many styles). I'm looking forward to having this one on tap in a few weeks!

Brewed an 80 Schillings a few weeks ago. I'm kegging that beer and then brewing a Wee Heavy to rack on top of the yeast cake of the 80 Shillings.

Took off work all next week so I have a few brewing related activities I want to take care of. I will probably brew an ipa on Monday since its going to warm up a little bit. I also have to bottle a double ipa, vacuum seal a bulk hop order, and take my first gravity reading on a sour red I brewed almost a year ago. Hope everyone has a good Thanksgiving next week and gets to share some homebrew with friends and family.

10 gallons of oatmeal stout (Maris Otter, flaked oats, CaraMunich, C80, Roasted Barley, and Chocolate Wheat). 5 gallons will get dry hopped, I’m thinking Simcoe. 5 gallons will get lactose, toasted coconut, and a vanilla bean or two. Aiming for around 30 IBUs, hoping that will be enough for the dry hopped without being too much for the sweet.

First "real" batch on the new system (two 20 gallon pots, no sparge, pump to recirculate and transfer etc.)

I need to bottle the Citra session IPA I've got on the go this weekend, if I can find the time. I also have my tripel left to bottle, but that can wait another week if it has to.

    Busy beer weekend.

Kegging a PB chocolate stout, feeding my lacto brevis and Brett trois cultures, cleaning a few kegs, then brewing a rye IPA (hopped with Nelson and Galaxy), and double IPA (fermented with GigaYeast's Conan, hopped with Amarillo and Simcoe). Going to also try to squeeze in a batch of Berliner if all goes well.

Tomorrow will be brewing essentially a Velvet Merlin clone and then attempting to make it Velvet Merkin with some oak chips and Makers Mark bourbon.
