    Not brewing, but just cracked open a test bottle of the first saison I ever brewed, hopped with Galaxy. It tastes amazing, just needs another week of carbing.

    Brewed up a hoppy red, or maybe india red ale, or maybe a red IPA... For some reason I've always been reluctant to do a flameout addition but finally gave it a shot yesterday, curious to see how that turns out. Despite getting a super late start due to having to drive to the airport, and battling crappy weather I think I had my best brew day yet. Hit something like 85-90% efficiency!

    It's a nice, warm day here in Northern CA, so I've decided I'm brewing a saison. 2.5 gallon BIAB batch:

    5 lbs Belgian pilsner
    .5 lb Vienna
    .5 lb flaked wheat

    dough in at 120 F, slow rise to 150 F, 60 mins @ 150 F, slow rise to 168 F, 10 mins mashout at 168 F.

    90 mins boil, with:
    .5 oz saaz @60
    .5 oz saaz @15
    .5 oz styrian goldings @15
    .5 oz styrian goldings @ flameout
    .5 oz saaz @ dry hops

    pitching 1 (4 month old) smack pack of 3724 and 1 (3 month old) smack pack of 3726 at 70 F. Will let it rise to whatever it wants to. Will probably rise into high 70s.
