    So, what are the plans?

    Personally, I'm going to be calling an audible when I visit a new homebrew shop in the area tomorrow. I'm thinking either oat saison, belgian IPA, or smoked mild, depending on what they have (oat malt and golden naked oats, oak-smoked wheat and cherrywood smoked malt, or just some belgian yeast).

    I will also be bottling a saison using motueka and sorachi ace hops (3711 yeast).

    Sounds awesome. I am going to brew a Strong Oatmeal Coffee stout, Later to be Dry hopped, and aged on Vanilla Beans. Preparing for winter. Cheers!

    I will be brewing my 2nd and 3rd homebrews. one will be a bourbon oaked stout, and the other will be a amarillo ipa.

    Brewing the last of 4 batches for my cousin's wedding. Centennial and Amarillo Pale Wheat Ale.

    I'm going to make something along the lines of a pale ale with the last of my extract ingredients. Will decide the hops at the last minute.

    Hopefully I'll be doing three gallon all grain batches within a couple weeks, just gotta get off my ass and get the mash tun and hardware. Maybe I'll do that this weekend since I have three days off... :sunglasses:

    I got a recipe I am trying to input into beersmith. 1839 XXX ale its a mild
    If the malt gets here today, I am going to attempt.

    19.8 lbs Mild malt, 5 gallon, 240 min boil Paul's mild is best the say.
    5.66 oz Goldings 4.5% 240 min
    .26 oz Goldings 4.5% dry hop

    Mash 120 min@151 F
    Fermentation 76F
    Yeast: Nottingham Ale Yeast

    OG 1.104
    FG 1.018
    ABV 11.43%
    Apparent attn 82.40%
    Real attn: 67.51%
    IBU: 75.7
    SRM 12
    EBC 23.6

    I sure hope I do it right.

    Brewin a Holiday Saison kit from NB, got here today should brew it tomorrow or Sunday, haven't decided for or against a yeast starter yet.
    Just got a new fermenter too so I doubled my production!
    Just need to brew saisons til I can get a cooler for this new bucket.

    Both! I'm going to use 2 lbs of crystal and then dry it out with 2 lbs of sugar. I kid.

    Pretty balanced, but leaning slightly sweet if anything. And equal parts Citra and Centennial for late additions, which I really like in APAs.

    More corn sugar bro, less crystal! J/K. That sounds tasty. Finally cracked and brewed my first APA/XPA (Dry, biscuity, no sugar; Citra and Centennial for my 2nd dry hop btw) for a friends b-day a while back; I'd like to go back and brew a slightly sweeter one for comparison.

    Somewhere between an English ESB and an American Brown...

    OG.051, IBU40
    Timothy Taylor yeast
    Heavy late additions of Palisades, Admiral, and Amarillo hops
    11# Pale, 2# Victory, 1# C60, .5# Pale Chocolate.

    We'll see how it goes. I'm actually not totally confident in the recipe... It is a riff on my standard Special Bitter recipe with the addition of the .5# Pale Chocolate malt to take it into "hoppy brown" territory.

    Any thoughts?

    I'd like to knock out a couple batches on Sunday - a spiced pumpkin ale for the holidays and rebrew a tripel that was well received at a recent competition (with a few tweaks to the recipe). Also plan to bottle/keg my Coffee Maple Bourbon Vanilla Imperial Stout - no that is not a joke haha.

    Sunday will be my first ever brew. Got the standard Chico Pale Ale kit so I'll be brewing essentially a SNPA clone. Assuming all goes well, I already have my mind set on my second brew, RIS with bourbon oak cubes. But pretty sure I'd be best served rigging together a blowoff tube instead of using the included airlock for that one.
