I'm finally getting around to brewing a Cascadian Black Ale / Black IPA. Although I'm brewing it on Saturday, I think I'll call it Black Friday IPA. It is similar to HB42's quoted Stone recipe above, although I'm shooting for an OG in the 1.060 to 1.065 range. Hopping schedule will be similar to the APA IPA recipe.

    90% Pale Malt
    5% Patagonian Crystal 75
    5% Carafa III Special

    Chinook for bittering
Simcoe/Amarillo/Cascade for finishing and dry hopping

CP's WLP862 Cry Havoc yeast (most likely).

Anybody else lighting up the burners?

Yup. Wee Heavy will be brewed on Friday, adding Knob Creek Single Barrel to the keg.

    Recipe:

    1 lbs Munich
    1 lbs Melanoiden
    1.5 lbs Crystal 60
    .25 lbs Chocolate
    .30 lbs Peat Smoked Malt
    .10 lbs Roasted Barley

    2 oz East Kent

    Wyeast 1728

Alright, the "Who's brewing this weekend?" threads starting on Thursday were toeing the line, but this is ridiculous. It's only Tuesday. I work weekends, my days off are in the middle of the week. I'm not even brewing saison I said I was gonna do in last week's thread until tomorrow. *end rant*

So I did find some unpasteurized cider locally, from a farm that sells their apples to a local winery to make hard cider from. Put it in the carboy with Camden today, I'll probably pitch yeast when I get home from work Thursday night. Heating up strike liquor for an overnight mash on the saison right now.

Perhaps it is ridiculous, but this week my weekend starts today. :grinning: What's even more ridiculous is that I misspelled "Who's" as "Whose" in the title. :grimacing:

As an unproductive member of society, my weekend is perpetual.

Just started the strike water on a La Chouffe clone. I'm doing a mini(2 gallon) batch . . . will split and have 1 gallon hopped to mimic Houblon Chouffe. And I'm pretty sure gnomes don't get hung up on when a weekend starts . . . right Marcel?

never tried that yeast. out of curiosity, why did you choose that one for this beer?

I'm going to hide out at my bro's and study/brew all weekend. he's out of town so I'll have the place to myself. studying works well with brewing because of all the down time, waiting for stuff to finish mashing/boiling/cooling etc. Gonna brew my Munich-Sorta-Smash:

    • 7.75 lbs Munich I (10 SRM)
    • 4.25 lbs Munich II (20 SRM)
    • 0.25 lbs Caramunich III
    • 0.25 lbs Caramunich II
    • 0.5 lbs Caramunich I
open to suggestions on hops. was thinking maybe just using tettnanger, with belma for bittering, but really don't know what to do off hand.

also open to suggestions on yeast. have US-05 and Irish ale on hand, but was thinking of using something else, perhaps something new.

I wish. Too many family obligations.

What I will be doing is (oh joy!) bottling. I've got a couple beers kegged that I need to bottle for christmas gifts, and this weekend's the weekend.

Side note: Goddamn the autocorrect on this site. Every time I typed "kegged" above, it changed it to "legged."

I was originally going to use it for some sort of lager, but after evaluating my kegs and finding that the IPA keg is by far the one with the least amount of beer, I decided to use it for an some sort of IPA. (Can't run out of IPA!) I've used the yeast for a Cz. Lager before and it worked well. As it is supposed to be good for both lager and ale styles, I thought I'd give it a go for a Cascadian Dark.

In fact, its time to get the starter going now.

Woke up to a very Thankful sight . . . this lazy bum has a Saison fermenting on day two and mini-carboys of a strong pale ale and a to-be-hopped pale ale that started overnight. The minis are in glass and for a change I get to see the yeasties at play. Will measure out my dry hop addition for APA IPA between football games. My Rauchbier has another month to lager, but thankful nonetheless. January is looking good . . .

No brewing, moving a robust porter into secondary.
