Why did you start your cellar?

    I'd like to pretend that I started mine with the pure intention of aging beer. In actuality, I kind of went overboard and bought too much in a short period of time. Hell, I had to buy a fridge just to use as a cellar, because basements don't really exist in this part of Texas.

    Now, I'm culling (drinking!) the beer that probably will not age well, based on ABV and style. Anything that I haven't tried before I'm also drinking, because there doesn't seem to be a point in aging a beer whose flavor you haven't experienced.

    Why did you start a cellar, and what have you gotten out of it besides a bunch of bottles that you have to be concerned about?

    Pretty similar to the first post, I just keep seeing more beer on the shelf that I was interested in trying.

    Buy three, drink the hoppy one, repeat.

    Too much to drink and too little time. At this point, I also hate cracking crazier rare releases without someone to share it with. So they tend to build up quite a bit.

    True. That's why I keep buying beer, getting home, and wondering where the hell I'm going to put these new bottles.

    It was because back in the late 90's I had some friends that were starting to store away some wine... I figured why not high alcohol brews as well... I wish I had put a bit more thought into it and really collected instead of buying a couple and trying them after a year or two... the best two beers I've ever had and cellared were a 2004 Sam Adams Chocolate Bock that I had in 2010, and a 2003 Ommegang Three Philosophers that I also had in 2010! Both were insanely fantastic!!! I still have a 2004 SA Chocolate Bock, and it's my oldest bottle at the moment. I have 06-11 GI BCBS but I haven't had the 06 since 06... but had the 07 last year and it was UNREAL!!! Deep, thick, oily, and delicious!!!
    (BTW... I realize that 2004 SA Chocolate Bock was only 5.5% or so... but it really did get soooooooo much better with age!)

    I agree with obtaining too many beers that I'm now becoming increasingly concerned about. Sometimes I feel like its a chore. There's certainbottles/verticals I feel I "have" to drink sooner then later. It would be alot easier if I knew friends/people that have appreciation for craft beer (other then my wife ) to share some of these beers with.

    I mainly began building the "cellar" because I like to have different beers on hand for any mood I may be in or for whatever occasion. I like having options. Many, many, many options :slight_smile:

    It was pretty intentional on my part to learn about the process of aging beer. Started off with stuff I knew, by reputation, would do well - specifically, SN Bigfoot. So started with aging barleywines and it gradually just grew to RIS, BDSA, and then trying some different things like DIPA and Am. Strong Ales.
    I don't have a large amount, maybe 4 cases, but it keeps me entertained.

    I also live in Texas and also don't have a cellar, I am just another dumb ass with beer in a closet. I also am pretty good at convincing myself that it is "close enough" to cellar temp. (trade partners....I keep your shit in the fridge!)

    I did it to see how beers develop with age. Slowly I started to realize I'm not a big fan of aged beer. Now I'm just drinking it down to be as small as possible.

    An aged Old Stock Ale blew my socks off, and, you can only drink so much
    Stone IRS before the weather turns warm and the summer seasonals are released.

    I bought a whole bunch of Dark Lord in 2009 and 2010 with intentions of aging them. Then last year I decided to start trading, started my job, and my modest case of Dark Lords blossomed into waytoomuchfuckingbeerforoneperson.

    I started because all these beer geeks on BA were talking about drinking beers that had been aged, it sounded cool and I knew wine got better with age so beer probably would too. I found out the rewards of aging are hit and miss, and the time invested and risk of infection or oxidation is not really worth it. I quit buying beers with the intent to age about a year ago.
