Why do you drink saisons?

    You could write that whole thesis just based on Stillwater and Hill Farmstead! perfect examples of the huge variation in the style, yet you still know a saison when you taste one. Recently brought a Seizoen Bretta to a nice modern French restaurant and it was pure bliss.

    I love them because they are light and refreshing. They usually have fruity and earthy characteristics that I enjoy in a beer. They're very simple yet can be very complex too with all the flavors and aromas.
    They're one of my favorite styles to drink and brew.
    I also think they've came back in popularity because of their versatility. Brewers can use many different types of ingredients in the brewing process, namely hops and adjuncts.

    I like saisons cause IMO they are the most refreshing beers to drink. Especially the sour ones!

    You should check twitter under the hashtag #beerchat. Last Thursday's beerchat was all about saisons. Lots of good info for you there.

    I drink saisons for their crisp, refreshing nature and variable taste complexities. They're almost the wine of beers for me in that regard.

    Because I need something to brew in the hottest months of the summer and Saisons ferment well in warm temperatures.

    I drink them because brewers brew them and they are good. As long as that is the case I will continue to drink them.

    Hennepin is not bad, but if you happen to see the new (well, I just saw them in the Chicago area recently so I think they're new) four pack cans of St. Feuillien Saison, get that instead. It's a couple bucks more than Hennepin but it's much, much better. I could go on about many other great Belgian ones, most of which have already been mentioned, but I was really pleased with this one lately.

    As for somewhat easily available American versions, Upright's Four, Five and Seven are also excellent, though all the bottles I've seen lately seem to be pretty old. I had a Five yesterday and while it was still good, it was definitely not as bright and hoppy as when I first had it several months ago. No bottle dating, so proceed with caution.

    FFF's Rabid Rabbit is interesting--they put rock candy in the boil, as well as chamomile, and there's a spicy sweetness that's different than most others. Not close to being a favorite, but it's something fun to try when you are more familiar with the classics and standards.

    Sofie is really, really good and probably the easiest to find. It's even better with a couple of years on it. Seriously, I check dates on every four pack I see and if they are a year or two old I buy them immediately.

    Saison are different, tasty, complex, on the lighter/refreshing side, and tend to be "lower" in alcohol (at least compared to a lot of the bigger styles that tend to have the same big taste and complexity). I really enjoy all the different yeast strains used in them, how the can be funky and/or tart, and how brewers will make crazy Saisons with things like flowers and random spices. The only issue I have with Saisons is that more should be aged in wine barrels.

    Because you can have ten different saisons in the same tasting that taste nothing alike. They can go from table saisons to 10%. The complexity keeps a lot of people going back.
