Will craft beer ever get back to it's roots?

    So if I'm getting this straight, you're saying that Saison as a style only begins in the 20s with places like Dupont, in part because anything earlier can not be documented, and that anyone since the 20s who deliberately uses lacto (or American hops in place of nobel hops) in a beer labled "Saison" is using a gimmick and should come up with a different style name for the beer they brew even if all other things are equal.
