Wine yeast in a Nelson IPA

    I was just listening to the BN Podcast where Shea Comfort talked about using wine yeast in beer. I have had Alpine's Nelson IPA a few times and really love the white wine characteristics in that beer. Has anyone ever used a wine yeast that accentuates the vinous esters in conjunction with a hop known for giving similar flavors?

    Note that wine yeast generally cannot metabolize maltotriose, and therefore will not attenuate malt wort properly if use on its own.

    Wine yeast will not metabolize maltotriose or maltose. You can use Convertase AG-300 to break the enzymes down. Torrified wheat will help to combat loss of body. I have a thread on this.
    Mine was a wheatwine w/ Nelson, Gewurztraminer, WLP727.

    Understood. Shea has some good details regarding the interaction/relationship between wine yeast and beer yeast (proteins, killers, mouthfeel from fermentation byproducts, attenuative capabilities...) I am thinking I would probably be pitching a blend of yeasts or perhaps even two batches, one with beer yeast, one with wine yeast, then doing a blend to get the desired characteristics.

    Yes, I did catch the part about the convertase enzyme, I remember your thread now and will definitely take a look at it again.
