I'm brewing a Belgian Wit for the first time tomorrow, and planning on adding orange zest, Chamomile flowers, and crushed Coriander late in the boil. I'm using a mortar and pestle to crush the coriander. This feels like a dumb question, but do you throw these in commando or put them in a hop bag? I assume commando, but don't want a mess in my fermenter. TIA.
I've used fresh citrus zest, commercially dried peel, grated ginger, coriander and other stuff in a DIY hop spider very similar to this one and if worked well. My coriander gets crushed/ground with a few pulses of a small coffee grinder.
I'm with @riptorn . . . bag 'em. Typically I add my zest/corriander at 5 minutes and give it a good stir or two.
Follow-up: with a 50/50 split in advice for commando versus bagged, I hedged, boiling them commando but then using a strainer when racking to the fermenter. There was only a small amount of chamomile in the strainer. No zest or coriander. Next time it's commando for me.
Depends on your system but really doesn't matter much as it will drop after fermentation anyway. I put all boil/post-boil additions into a bag since it's simple and keeps the worth a little cleaner
