Wl 566 Saison II

    I'm brewing a Saison Friday with this yeast. My plan is to pitch the starter around 68-70f and let the beer free rise to the low-mid 70's then hold there with a heat blanket/controller. I don't like my Saisons too spicy and phenolic so I think this should work nice but this is my first time with this yeast. Thoughts everyone?

    This is my favorite Saison yeast. It is a beast and you will hit mid 70s no problem with a free rise (possibly hotter internally). I usually push this to the mid 80s or higher but I like the spice (usually add black pepper for more). The lower end will give off more of a fruity flavor/aroma to the beer. If you really want it fruity don't let it free rise. I haven't had any trouble with this yeast getting stuck or not drying out the beer (mash at 149 range and finishes around 1.003 give or take a point).
