WLP002 for Double/Imperial IPA?

    I used vikeman's brewcipher, which does treat it as 100% fermentable, and it projected the FG at 1.015.

    Mash low, ferment low. I'd do 148 F mash rest, and 64 F for ferment. Then after 72 hr primary, let temp increase to 70 and hold. That's what I'd do, WLP002 should be a good choice.

    That's still 0.003 higher than I think most of us would like a DIPA.

    Mash at 145F and then raise up to high 150s for conversion after an hour. That will make for a dry beer.
