WLP007 Slow Start

    Brewed a pale ale two days ago. 5.5 gallons of 1.052 wort w/ yeast nutrient and 1 minute of pure O2 through stone, pitched 2 pure pitch packs of WLP007 to the 78F wort. Set in ferm chamber with probe submerged set to 68F.

    No signs of fermentation. Going to check gravity tonight. But has anyone had slow start with this strain?

    Never had a slow start and you're well above optimal fermentation temp. at start. Odd. Everything seems right. No signs at all?

    Check the gravity. I'll bet you a bomber it's already completed fermentation while you weren't looking. It could be a bit of a stealthy yeast.

    Using a carboy? ...if not, could be a leaky seal :slight_smile:

    I have never had an issue with it but I always create a starter just to make sure.

    Still at OG, just checked. Hit it with an addition minute of O2. Really doesn't add up..

    The only difference in my process was I had misplaced the air filter for the O2, so I didn't use an air filter when oxygenating. Don't think that makes a difference tho...

    That's the main reason I either do a starter with white lab or use wyeast instead. I've had D.O.A. yeast from white labs before. I'm not blaming white labs, yeast goes through a lot on the way to my hands.

    Update for anyone who cares: hit with another minute of pure O2, and roused the yeast all around. Activity started about 3 hours later. We shall see how it goes!

    All yeast start different. Another good way to check is to turn the light off and hold a bright light to the carboy and you should see the yeast moving around.

    Update: A week in, just pulled a sample after 3 days dry hop. I am pretty sure this is the strain Trillium and Civil Society use. Character is nearly identical. I will be using this strain from here on out as opposed to WY1318.

    Been awhile since I've used WLP007 but it does make a tasty beer. Might have to use it again soon.
