    Good morning gang,

I'm looking to brew my first Kolsch within the next few weeks and had a quick question on the yeast starter. I couldn't turn anything up on the ol' google machine or forum search here.

What is the recommended temperature for fermenting the starter? I recall seeing a discussion that suggested fermenting the starter for ale yeasts on the higher end of the recommended range, but I wasn't sure if that would apply to a beer I plan to ferment on the cooler end of the spectrum (probably ~58* during active fermentation and gradually bringing it up to 62* after the peak of activity). Any suggestions or words of wisdom?

    Many Thanks!

normal room temp will be fine for your starter.
be aware that 029 can be a bit finicky on the cold end. I don't find it needs to be that cold, pitch near 60F, and ferment it from 62-64.

    good luck--

Thanks Michael, and I'll adjust the plan for the fermentation temp.

I do all starters (ales, lagers, hybrids, brett) at room temp. I would cold crash and decant hybrids and lager starters as much as possible.
