WLP618 recipe

    Saw this yeast on the White Labs website and wondered about recipes using it. Has anyone tried using this in a homebrew?

    I've never used it but it "will produce beers with an alcohol percentage of around 1-1.5% ABV depending on strain and wort recipe" because it "does not ferment maltose or other larger sugars and will only ferment the glucose, sucrose, and fructose." Therefore, to make a more typical beer, you could add another yeast after this one has completed. From the WLP618, you might get "lower ethyl acetate production" and increased esters. Also you can pitch less because it only works on such select sugars.

    A low alcohol beer is exactly what I am going for. I have a 4-gallon batch in the fermenter. Only used one vial. Definitely slower fermenting than any other yeast I have used. Going to go for a long fermentation for a couple of reasons. Thank you for the feedback.

    Might be a lot of trial and error on it, but given that it only digests three of the simplest sugars, could make some really interesting low-abv beers. They might even taste like beer. I'd be interested in doing something along the lines of a Czech pils but at half OG. Everything else the same with the exception of the bittering addition. Tune everything in from there.
