I brewed the northern brewer partial mash cynical ale, but replaced the yeast with wlp 670. IG 1.043 I took a reading on Monday (14 days in primary) and I was down to 1.010. I took another reading today and it hasn't changed. I was wondering if I should give the Brett more time, or am I ok to bottle. I feel like 1.010 might lead to bottle bombs. Any suggestions are appreciated thanks.
Leave it alone. You're dealing with Brett, so let it sit for a while...maybe a month+. It won't hurt the beer. Give the Brett some time to do its thing.
