Very cool! Thanks for posting. "The ancient brew ... was more porridge or gruel-like" and was "probably weaker than modern beer." Yum!! So it was like a beer soup? If we observe that beer has gotten drier and stronger (and bubblier) over the centuries, can we say that the brut style is the most distant iteration? The brut style if you'd even call it that is, to me, a style based on thinness, and dryness.
