OK, so I've decided to really dive into water chemistry. I have a reverse osmosis tap in my house and am collecting a couple gallons at a time throughout the week until brew day.

So last weekend, I brewed and began filling up the newly-emptied gallon jugs yesterday. It occurred to me that I had left these jugs open for probably a couple hours at most and that they might not be exactly sanitary for collecting brewing water. First of all, am I being paranoid about that? If the water is going to eventually be boiled (as wort), do I really need to worry about any microbes causing problems in the water I'm collecting?

Well, anyway, yesterday I thought, yes, that's bad; these jugs are not clean. No problem, I thought, I'll just shoot each jug with Star San solution a minute or so before filling it with RO water. So I collected a couple gallons doing that method yesterday.

Then it occurred to me today while I was tweaking a water profile that Stan San is acidic. So, would residual Star San in the water jugs I'm using have an effect on my water profile, especially if I'm starting with RO water? Or am I way overthinking this? TIA!

Spritzing you jugs with Starsan isn't going to change your collected water much. And no, it wasn't necessary.
