WTF? ...BRY-97 Throwing Banana

    Made a Berlinerweisse ~ New Years...first time using BRY-97 and an unblended pure Lacto culture. Tastes like a hefe...I was disappointed it didn't get sour enough, but the esters are amazing.

    Kinda weird...and yes it was fermented a little warmer than the low 60's :confused:

    Haven't experienced that yet, but the 2 times I brewed with BRY-97 both resulted in krausen shooting through the airlock.

    I've used BRY-97 a fair bit when it became available.. Slow to start, despite rehydrating it, and pitching a bunch, and even using O2 in later batches.

    Once it started, back the hell up, because it's gonna BLOW OFF. Murky and ugly beer, but crashed better/sooner than US05 for the time being. Not as crisp.

    Banana notes though.. makes me wonder if your lacto culture is a bit wonky. Especially if it's not sour after almost 5 months..

    I used Bry-97 on an IIPA last year with a hopbursted Citra Galaxy combo. The inside of bucket was absolutely coated in krausen. Put the blowoff on and my bedroom smelled of mango and grapefruit for weeks. It was awesome!! If I had any banana to it, the hops covered it!

    Have used it in IPAs a few times...good yeast, but for some reason, it's totally out of character in this particular Berlinerweisse.
