    I've got nothing for you @hojo813 ...second generation is suppose to be faster and better attenuators compared to first and agree with Vikeman's assessment as usual. I like @Soneast's thought too, cause that's happened to me too...a true top-crop krausen that just won't fall...but if it's still fermenting after 10 or 11 days...well you stumped me.

    It's getting there. It stopped looking like it's still fermenting in the carboy, but the krausen is still there. I'm supposed to cold crash Monday. I will be drinking my gravity sample just to see what's up! I'm debating on stirring up the krausen ring just to get it to drop while crashing. My sanitation is good but I'm a little leary about it. Probably not going to do that as I think about it. I dry hop after cold crashing so we will see how that turns out.

    +1 on not doing that. Or rather, I don't see anything to be gained by it.

    I didn't do that. It was just a scientific curiosity. I've had it cold crashed for a week now. Added gelatin finings 3 days ago. CLOUDY AS ALL GET OUT. I start my dry hop tonight so I'll see how it tastes. In the end that's all i care about. I will definitely not be using this yeast again in the future.

    What did you're grist look like? Was there a lot of wheat, rye, or oat malt, or any flaked grain in it? Figuring that if the wort was protein-heavy, krausen may stick around for a bit and you'd have extra haziness.

    None of that. 13lb 2 row, 1/2lb caramunich 1, 1/2 lb carapils. That's it. I added a little more hops in the flameout (1.85 oz) than normal so I could clean out my freezer. Other than that, nothing has changed in my processes over the past dozen brews or so. Mash temp and pH were on the money. Water was good. Our ground water is a tad heavy so perfect for IPAs. I've produced crystal clear beers with the same process I just did. It is also possible that it didn't look as clear because of the condensation on the outside of the cardboard. Time will tell. Just started the first day of dry hopping today. I was cold crash before because I like the freshness. I can tell the difference when I cold crash after dry up. But that's just my personal opinion. who knows? This could turn out to be perfectly clear and I'm just chasing a ghost. Either way, it tastes amazing. I have a brew day coming up and two more weeks and I'm using Omega A38 juice for the first time. made a starter and that thing went bananas in less than 6 hours. Already got the blow off tube out of storage...

    My experience has been when it won't stop fermenting, it means you have a wild yeast infection or lactobacillus infection. Have you tasted it?

    No I haven't. It's only been fermenting 65 hours as of now. I usually don't do any tastings until about 10 days out

    Scratch that. My bad. Wrong thread. Yes I have tasted it. It's amazing. Bottling today Exactly what I wanted minus the haze. I'm just a little irritated about the flocculation of this strain. Hopefully after a week in the fridge it will clear up

    An update... It is phenomenal. It checks every box and when I was looking for. It is as clear as something you would buy at a brewery. Great smell. Perfect color. Even my wife likes it and she doesn't like IPAs that much. Perfect bitterness and doesn't linger. Bittered with magnum.The pine of the falconers flight blends well with the citra. It was a simple malt profile of local Virginia 2 row about a half a pound of carapills. And just a half pound of caramunich 1. I take it back What I said in my earlier post. I will use this again. I don't know what caused it to look hazy while it was in my fermenter. It is only the third batch I've done with that particular one. Could have been condensation. Who knows. All I know is that this beer turned up fantastic. I'm going to outer Banks next week and taking a whole case. I hope it lasts me for that whole week. Something tells me it won't!
