Hi guys, I brewed a Hefe, with an OG of 1.049 on Saturday. I pitched the Wyeast 3068 and left it in my room @ about 68 degrees. By Saturday night the airlock was going crazy so I moved it to my basement which is about 62-64 degrees and set it on the basement floor to let it ferment at the low end of it's range. After about 24 hours I had a krausen in the airlock and switched to a blowoff. Then Tuesday night I took the lid off switched back to an airlock (noticed the krausen wasn't near the lid anymore) and took a hydrometer reading at 1.024. I have seen no activity in the airlock since. Took another hydrometer reading tonight (Wed) and it hasn't moved. It may have went to 1.023 but I also moved it back to my room at 68 degrees. Should I be worried about this? Anything I can do to get it going again?
You've already warmed it up. And moving it roused the yeast. So don't worry and be patient. (Chances are you didn't even need to do those things.)
I'm with vikeman, relax, let it sit for a bit and see where you are later. If it were me I would check it next Tuesday and see where it is then.
A note on 3068 - I have found it to be very temperature sensitive. I've had problems naturally carbonating at 64 degrees, had to swirl the bottles and move them to the warmest part of the house after three weeks and very flat beer. Keep the beer at 68 minimum, can probably even get it into to the low 70s, you'll be fine.
The only time I used it I fermented in a 62 degree room and bottled conditioned at 66 with no issues.
