Wyeast 3711: a BEAST!

    (interpretations of the picture aside...) When JackHorzempa said 50% headspace, he may have meant 'headspace that is 50% of the size of the wort volume' which is often what we mean around here when we talk about headspace percentages. It's imprecise, but has sort of been customary.

    That's what I figured where he was getting his numbers from. I just didn't see it as practical. Take for example putting 2.5gal into a 5gal fermenter...that would be 100% headspace. I don't know, to me it sounds weird and inaccurate. But now that I am familiar, I will use the same and accept the custom.
