Wyeast 9097

    Anyone have much experience? The site calls for 9097 temps are 68-75°F. That seems a bit high to me. Also I did mixed in a vial of WL005 to two packets of 9097.The beer was 1.090

    I pitched at 58*F, raised to 62*F for the fist day, not closing in one the end of day two it's at 67*F. Which is a tad higher than I've been doing. But I imagine that either now of after another 23 hours it won't mater much.So I should of asked before I pitched.

    So why the extra three degrees? To favor Brett? That doesn't make much sense unless they mean the conditioning period. But lately I've been pushing my big beers to 74-45*F after four days anyway and I haven't noticed anything negative.
