Xyauyù Barrel Question

    I couldn't think of any other place to post this but here, so my apologies if this is in the wrong sub-forum.

    So this past weekend I obtained a bottle of Xyauyu Barrel from my girlfriend, and I opened it up two days ago and have been drinking it little by little each day since it's completely still. I've been keeping it in my room in a cabinet that keeps it slightly cool (not cellar cool, but sort of close, my room is pretty cool) to the touch with the cork shoved back into it, but that got me thinking...how long would it take for this stuff to spoil if it's corked and slightly below room temperature? I'm talking "you'll get sick if you drink this" spoiled, not "this tastes like ass, but is completely harmless" spoiled. I'm sipping on it right now and it tastes just as good as it did the day I opened it. I know it's a strong beer at 14%, but I work in a geomicrobiology lab and know that 14% alcohol is not even close to being high enough to keep bacteria out.

    Any insight would be much appreciated!

    If it is completely still you should be fine. I have a bottle of Xyauyu Barrel and now that I know that it is still carbonated beer I might do the same thing with a wine stopper. Thats why Utopias has a resealable cap. The only way that the beer could be ruined is by loosing carbonation in my opinion(its already still so no loss there). As long as you pour the beer and recap it right away you should be fine. The beer will oxidize faster due to fresh air being put back in the bottle each time you uncork. You should just put it in the fridge and that will help to slow oxidation down.

    While 14% can't kill all bacteria, I thought that there are no dangerous bacteria that can live in any amount of alcohol above about 3%. I could be wrong.

    I opened and enjoyed my last bottle over the course of about a week. I noticed a slight bit of oxidations but very little loss of flavor. As others have said, Xyauyu is really Utopias light. It doesn't have quite the intensity or shelf life, but it does hit all the right notes. The bottle also comes corked, and the cork can be reinserted and helps keep it nicely.
