Yeast advice

    I just got some for this reason. No experience with any kveik yet. The fermentation temp range says 68-95F. With winter coming soon, 68 may be hard to maintain at times without a heating device. Do you have any experience at the low end for this yeast? Do you think 64-65 would be acceptable?

    I haven't used it quite that cold, but I'll bet it turns out just fine. Just be sure not to underpitch. Pitch at normal rate for ale yeast, which is typically 1-2 grams per gallon (assuming it is dried yeast).

    That's what I thought. Similar to WY1728, Scottish ale, which specifies 55-75F but I've seen it keep chugging down into the low 40's.

    I make big starters when I want clean beers, will do so here.

    Don’t use Kviek in the winter unless you can heat it up.
