Yeast Clean Up

    Agreed. I read an article on fast grain to glass beers with the hope to make enough beer for my party and that’s when the light turned on. If I’m not spunding now then I wait 2-3 days after FG is reached like Jack had mentioned.

    A few years ago people were still talking about transferring to a secondary vessel all the time. I think that’s almost dead besides fruit and barrels reasons to transfer.

    I still learn new things all the time. But I'm usually in no rush to finish a beer, so I like to let them sit a long time on the yeast. 30 days is nice and it's like aging time. And a yeast like wyeast 3711 seems to keep working, albeit very slowly. I definitely notice flavors mellow out and change. And because I never filter my beer, it does help separate yeast. Further, I like to do a secondary to clear out the beer even more. Again, it's like aging time. After all this time, it can take over a month for the beers to condition to proper carbonation, and there is lees sediment in the bottles.

    With that said, I agree that once the true FG is reached you can pretty much bottle it, unless you want to dry hop or something, as mentioned. Now if you're asking about time, and you don't have a hydrometer, you should probably wait 2 weeks in addition to being sure that the yeast didn't get stuck.

    Maybe I should do a rapid grain to glass brew and see if I get what I want. But sometimes waiting is the best part! (jk)

    7-14 days for a 1.070 beer, 14 mostly for stouts because that's how I've usually done it and yes, I still secondary them.
