Yeast for British Brown

    On the topic of S-04 I used this yeast strain to brew my version of Trillium Galaxy Fort Point (a so called ‘NE’ style IPA) last year and that batch turned out excellent. I can recommend S-04 for producing a so called ‘NE’ style IPA.

    I brewed a 15 gallon batch of English brown once for an company party and split it into 3 fermenters. I used Danstar Nottingham in one, WLP 004 in another and Safale04 in the third. The one with WLP 004 was by far the one preferred by most of my testers, then the Nottingham and far behind was the 04.

    I've used the Fuller's strain a few times. Always flocced out before finishing, and ended up with gushers, but I'm much more of a "set it and forget it" brewer. If you're more hands on with raising temps and rousing yeast, you'll probably have better results. FWIW, I did enjoy the flavor of the yeast.
    Much bigger fan of WY1028, the Worthington strain, for English IPAs, Barleywines, and Porters/Stouts. The mineral character blends well with the earthiness I enjoy about these beers.
