Yeast Pitch Temp.

    hey yall,

    pitched WLP001 into a 5gal SMaSH Pale Ale at around 75F last evening around 9:30pm
    My house ambient temp is around 63-64. It is now 11:15 am. I know it may just be too early to see signs of fermentation, but is it possible if my fermenter and wort reached that 63-64F that it would have stalled or sent the yeast dormant? Thanks.

    No...in fact you better hope it got to 63-64*F sooner than it proably did. 60s much better than 75 for that yeast (and most yeasts).

    thanks, i knew it would drop fairly quickly, just wasnt sure if it had gone too low.
    What is the lowest temp you can typically ferment ale yeast at?
    And what do you think the latest is that i should see activity until i take the lid off and take a grav reading?

    It depends on the yeast. The Chico yeast is happy in the mid-high 50s, Wyeast 1728 the same. Many Belgian stains will go to sleep under 65. The Saison yeasts like high temps.

    Know the yeast and how it works for the best results, treat it right.

    Send an email to Wyeast requesting a yeast chart poster which gives you all the info you need with their yeasts. Go with Wyeast, good people.

    Signs of fermentation should be evident if sufficient yeast were pitched into relatively warm ... well-aerated wort more than 12 hours ago.

    No.
    All else equal ... not only will WLP001 not stall when the wort temperature reaches to 63-64°F but WLP001 fermenting at 63-64°F is close to ideal.

    Also, to thread jack my thread, anyone here tried a SMaSH pale ale/IPA with calypso? 14.8%AA
