    Is it ok to sit yeast out overnight before adding it to the beer fermenter?
    I learned a trick from a friend who homebrews when the wort is finished.
    I add it to the fermenter that is filled with ice.
    This cools the wort down really quickly.
    I measure the temperature afterward and it was like 50 degrees. I figured it was too cold to add the yeast. So I went to bed and added the yeast the next morning. Is it ok to let the yeast sit out that long.
    When I started brewing I took the dry yeast added warm water too it and about 10 crushed up raisins. I was told the crushed up raisins give the yeast lots of sugars to eat to get a strong start.

    This cools the wort down really quickly. - "This cools the wort down too much" is what you meant to say.

Is it ok to let the yeast sit out that long. - See bullet point 1. Aside from the yeast, it's not good to leave the wort that long without getting yeast going. You're giving anything in that fermenter time to reproduce also and possibly foul your beer.

This just will raise your ABV. If you want strong yeast make a starter.
