Yeast Starter

    If it's still active, it will probably take a bit longer to crash. I'd probably take it out, let it finish, and then crash.

    If you're in a hurry and don't want to let it ferment out and cold crash, here's another option.... Right now you have about a 2 pints of starter wort, probably mostly spent. You could make another 1.5 to 2 pints of wort, but double the OG (shoot for 1.080). Combine this with what you have and you'll have a 3.5 to 4.0 pint starter between 1.030 and 1.040. Get that going and swirl frequently until it's ready. Not ideal, because you are starting with some alcohol, but it would probably work fine.

    Isn't this putting stress on the yeast? Should just get a new vial of WLP001 Cal Ale and make a new starter

    Maybe a little. If you're frugal, I'd probably try it. If you're not concerned with an extra $6-$7 expense, starting over would be 'safer.' Is the yeast still in the fridge? Any change?

    Yeast did settle out. I boiled a gallon of water with 3/4 lb. DME and got a gravity of 1.04. I split the gallon up between 2 Half gal growler. I decanted liquid from atop the yeast, swirled and pitched to new Wort. Looks like I got a decent amount from first to attempts.

    Second growler I pitched yeast dregs from a few different Belgian pale ales with Brettanomyces in it to see if I can reuse the yeast and bugs.

    Sounds like success! Just be sure to swirl the growler often for maximum (and fastest) growth.

    WLP001 is going great now, bottle dregs look like it have to give it time (has Brett and other bugs)
