Your Additive/Flavor no no's.

    I know many people strongly disagree, but, to me, coffee literally smells and tastes like crap. I've passed up on many highly rated beers because "fecal" isn't a note I ever want to write in my reviews.

    Im not a fan of mint, or coffee bean flavors i dont mind when its like a brewed coffee flavor but if its too bitter like a coffee bean it really takes away from the beer. also peppers are rarely good.
    and finally most fruit flavored beers (excluding sours) tend to be bad IMP

    • Peppers. Never, ever, ever put a pepper in a beer and ask me to drink that.
    • Coffee is getting close to a no-go for me as well; so many "coffee beers" just taste like day-old cold coffee to me that I'm starting to shy away from them.
    • Tea.
    • Pumpkin. In theory, it ought to be okay, but in practice I have never had a pumpkin beer I have liked.

    This is specific, but cherries in stouts. Everyone I have had to date is utterly revolting. Now, I love cherry sours/saisons/wilds and just about every other cherry flavored thing but I find the combination nasty in most stouts.

    This may change when I try Cherry Rye in a few weeks but up until now...pass.

    Too much of a chile or anything spicy. Example: Crime/Punishment

    Usually it's not even pumpkin they're adding to the beer, just the spices that make pumpkin taste good in a pie.

    Artificial anything. The flavors you get naturally from, say, raspberries or cherries is noticeably different than syrup or other additives made to taste like raspberries or cherries. Natural vanilla bean taste different than vanilla bean additive. Usually, too sweet.

    I'm okay with trying anything, just put it in whole. Don't try to supplement what you're going for with too much artificial flavoring.

    Chiles... I like hot spicy foods, but not in my beer

    I can't remember a vanilla flavored beer I liked. I usually like vanilla in other things though, so I keep trying vanilla beers. I should just stop.

    I'm game for basically anything, but most beers with mint in them I haven't loved.

    I have found something interesting with certain additives. There are a few that I love in beer, but don't really like on it's own. I'm fairly obsessed with coffee stouts, but I don't love drinking coffee, I never do it. While not strictly an additive, per se, I don't like drinking bourbon or whiskey at all, but I drink my weight in BA stouts and barleywines and whatnot.

    Why would anyone add HFCS post fermentation to a beer? I can see adding it post fermentation to a flavored malt beverage, cider, kvass or kombucha or something, but a beer? I've never heard of that happening, have you?

    Too much of anything.

    Too much honey; too much jasmine; too much lavender; too much vanilla; too much heat (I love chili beers, but habanero Sculpin was over the top for me); etc.

    Coffee and Pumpkin.

    If you want a cup of coffee, then drink a cup of coffee.

    If you want pumpkin pie, then go bake one.

    Keep that stuff out of beer, please.

    Banana, as it's unnecessary (just drink some Kwak, or any other excellent Belgian brew).

    Chiles. I used to live in Texas and had a dozen dozen of these. 3% of the breweries got it right. The rest are just playing to a demographic instead of making excellent beer. Make your money, I am not condemning that, but don't expect me to recommend it or rate it highly.
