The reason I tried this yeast is after drinking ludwig konig weisbeer, I don't know if it is the same but seems similar.
A great hoppy wheat is the Schneider Hopfen-weiss (the one made in Germany). I think it uses all Hallertauer hops, so no American hops, but there is a fruitiness maybe from the yeast.

On a similar note, I am about to bottle a weizenbock, made with just wheat malt and dark munich. Hopped up a little over style with German Saphir hops; late additions.

Hopping wheat beers to non-style-specified specifications is good by me. I even put late additions into my wheat (every time). But - they're always subtle, less potent hops, either something noble or something noble-esque or something like fuggles or willamette. For the upcoming elderberry wheat beer I will bitter to about 21 IBUs with a small amount at 45 min, then add the rest in at about 2-3 minutes to go, so that it just gets a slight boil but doesn't have much time to isomerize. I like the flavor you get from about 2-3 total oz hops, with most of it late.

I'm not as fond of these IPA type hefs and wheats, but to each their own.

Nah, man, sub out some of the dark wheat with pale wheat. A touch of midnight or chocolate wheat definitely helps with color. Cara-wheat is great if you want a bit of extra body and some sweetness.
Try 50% pale wheat 45% golden promise 5% carawheat, wlp380, and some amarillo. Good stuff.
