TRUTH FROM HEART
Barrel Fermented & Aged Saison w/ Fresh CA White Nectarines
7.1% ABV || 13.1 g/L TA || 750ml || $22ea
Artists have always used symbolism as a way to express ideas through their work. Scholars have suggested that artists would use nectarines to depict the heart and a leaf to represent the tongue. Combining these two elements was their way of illustrating the romantic notion of speaking truth from the heart. This beer is our attempt to pay homage to this concept through the art and science of brewing.
We started with Milk the Funk Collaboration #2 Saison base and fermented it with our house microbes. We aged it for 5 months in French Oak Pinot barrels before adding 4 pounds of fresh California White Nectarines per gallon and refermented in the bottle for 4 months.
