A beautiful, cloudy, reddish-brown with a nice thick tan head. Aroma is strong, malty and hoppy, with a good alcohol edge and fruit hints. Flavor is exceptionally smooth, more like a fine bourbon than a beer, with hints of fruit and butterscotch. It has a nice alcohol edge to it so you know that it is a high-gravity beer. This is one to be sipped and savored.

This beer was served to me in a small snifter (approx. 10-12 oz.). The head was minimal as was the lacing which, I think, is on par for the style. The beer was dark in color.... like a mohogany and was quite cloudy.

The aroma was redily apparent and quite typically belgian.... lots of yeasty sweetness. Also, a caramel aroma was present.

Taste: Excellent Dubbel. Lots of yeasty goodness with ripe fruit and caramel sweetness.

Mouthfeel: Here is where this one excells in my opinion. Most other Belgians have been too efforvescent and fizzy for my taste. Delerium Dubbel was nice and smooth.

Drinkability: A good solid Belgian Dubbel. I would recommend this highly.

Vertical tasting: I had the fresh on-tap keg as well as a bottle condition version from mid 2004. While they each had their own characteristics, and similarity of dark colour, I found the recent batch to have a creaminess, lace, and distinct fruity colour. The aged bottle had lost that fruitiness, there was more caramel as predominant taste bit while drinkable, had to have food to offset the astringency.

Have had this a few times at Five Seasons. This time it didn't come in a brandy snifter. It came in a long stem glass. Nice creamy, white head with good lacing.
Nice malt aroma and taste with a dark amber appearance. Taste got better as the beer warmed up. This didn't seemd quite as good as the last time I had it. I couldn't taste as much of the fruit as last time. But I did have this after the Flanders ale, which might have covered up some of the tastes.

I had this served on draft in their signature small snifter. It pours a dark brown with reddish highlights. The head quickly disappears and there was no lacing. There is very little smell but what I could perceive was malty and yeasty. The flavor is quickly warming hinting of nuts, rich fruits, and was sweet and malty overall. I would compare this beer to Trappistes Rochefort 8 but lighter in scent and warming qualities. Like the Rochefort it lacks something that I cannot put my finger on. However, overall it is a good beer and I would have another on a subsequent trip.

Dark brown pour with a quickly fading head. Awesome fruity, nutty aroma that was present from top to bottom. Good mouthfeel with perfect carbonation...very drinkable. The flavor was sweet and fruity with a nutty finish. An excellent complement to dinner. Having visited all 6 Trappist Breweries while in Europe I wasn't expecting this to compare with them but was pleasantly surprised. The best Trappist style beer I've had outside of Belgium.

Served on draught in a small snifter. Dark mahogany with red highlights in the glass; a slight film of foam and minimal lacing. Smells slightly sweet and malty, but the aroma is nearly imperceptible. Flavors begin with bitter floral hops, gradually develop a malty sweetness, and finally finish in a burst of fruitiness. Medium-heavy in the mouth with moderate carbonation.

A weak interpretation of a difficult style. Minimal observed head and head retention. The aroma was missing-in-action. Initial bitter hop flavor is inappropriate for a Belgian dubbel, and the expected fruity qualities only appear briefly in the finish.

Dark, cloudy, wood brown with ruby and gold highlights with a large cream-colored head that slowly faded to a ring and weather pattern. Brown sugar, spice cake and dried fruit aroma. The flavor is more brown sugar and spice with a dried fruit somewhere between prunes and apricots and a bit of cherry. The taste is full, soft and rounded. Very well brewed.
