Wild yeasts are showcased beautifully in this lightly tart, lightly sour brew (~2-3/10 in terms of intensity), which has a fresh clean taste, wild flora intangibles, and a high drinkability. Refreshing, balanced, and pleasant.
Malt profile is bright/helles, and I think I find some wheat even? Fruity esters from the yeast. Complementary fruity and floral hop notes. Soft on the palate. Light bodied, smooth, and wet.
I hope I can revisit this in finer grain in the future. A surprisingly tasty brew from one of Koln's finest - and least traditional - breweries.
