Pours a deep, dark amber, coloration with a small, fizzy head. Smell is vinegary, with a certain balsamico note and hints of dark fruit and red berries, with elderberry standing out. Taste is dominated by elderberry and oak tannins, as well as lighter notes of balsamico vinegar and red/dark fruit: plum, red grape, cherry, black/redcurrant, as well as some bready, caramel malt and a certain earthy/herbal note. Finishes sweet and sour, with a medium sourness and some oak tannins lingering in the aftertaste. Smooth mouthfeel with a medium body and very light carbonation.
This kind of reminds me of a cross between a Flander's Red and a Faro with its vineous character full of oaky tannins and red fruit notes as well as dextrose sweetness and sour, vinegary notes. The balance is not quite there, being a tad too sweet and vinegary for my taste, but for such a wild experiment it actually turned out rather nice in its own way. Certainly a very interesting beer.
