This one came a nice deep yellow with a thick creamy head on it with good lacing.
Smell was mostly light malt and slight fruit smells.
Taste was very light mostly tasting the pale malts with just a touch of a tart fruit flavor and a hint of yeast mixing in.
Mouthfeel was thin but did have a decent dry finish
Drinkability was ok, I found this beer to be nothing more than average, nothing bad, just didn't find anything great about it either.

Hazy sunshine amber with a good deal of visible carbonation. The head was small, eggshell in color and creamy. It fell over several minutes to a thick film, never disappearing completely, and left small sheets of thin, clingy lace. A quality look even if it was short on eye candy.
Saison had a wonderfully aromatic nose of sweet malt and orchard fruit (apples and pears). There was also an underlying spiciness that was really more of an herbalness if the truth were known. I had no luck in trying to figure out what spices/herbs were used and decided to see if the guy in apron and boots would give me some ingredient information. But first, I drank...
... and I liked. There was plenty of sweet malt on hand. My notes read "very light caramel malt? mostly pale malt?" The more captivating flavors, and the beer's centerpiece, was sweet and tangy apple and pear and those same undefined spices and herbs that were appreciated in the nose.
One of the brewers was gracious enough to talk with me about the beer (and a BA present during the brewing has contacted me as well). The specifics are these: 100% Briess Pils malt; Crystal, Northern Brewer and Hallertauer Herbsbrucker hops; candi sugar; and La Chouffe yeast. No spices or herbs were used; those flavors were due entirely to the yeast strain. And a very good one it is too.
The beer was sweeter than many saisons. Nectary apples and pears cruised along on a medium-bodied, slippery wave of deliciousness, with plenty of mouthcoating to wrap things up. The energetic carbonation was just what the doctor ordered. It kept things lively and lightened the mouthfeel to lush, fluffy perfection.
Millstream Saison wasn't an overly complex example of the style, but it was delightfully delicious and deceptively downable. Sweet, fruity, mysteriously spicy and juicyslick. A marvelous special offering from Iowa's only brewery.
