An inquiry is any process aimed at gaining knowledge or solving a problem. Our brewers wanted to explore the ideals behind farmhouse brewing, including ingredients and techniques that aren't widely used. Spelt and oats bring a full-bodied mouth feel and subtle graininess, while a secondary Brett fermentation imparts hints of hay and a dry, spicy mineral finish. Light hopping allows fruit, floral and spice notes to round out this beer's profile. Over time, the Brett will continue to evolve the character and carbonation. This was one inquiry that we'll be making again and again.

$4 CDN for a 375ml bottle from the brewery. Review from notes. Listed as a Belgian saison contrary to other reviews.
Appearance - slightly hazy, bright golden color. Two plus fingers of white head. Very good retention and some lacing.
Smell - yeasty and funky, Brett is quite present with some barnyard aroma and a pinch of lemon.
Taste - like these nose with loads of better and some spicy funky flavors. Slight minty characteristic and the end of some sips.
Mouthfeel - very smooth well carbonated and medium finish.
Overall - a very good Brett leaning saison. Worth a try for sure.

Standard Brett stout, with a bit more Brett funk character. On tap at Volo. Some floaters...in a tap.
