355 mL can from the LCBO; dated Oct 4 2022 and served barely chilled.
Pours a cloudy pale yellow colour, topped with more than two fingers of fluffy, meringue-like foam that dissipates within five minutes or so. It leaves behind a couple of concentric rings of messy lace, with a wide, creamy collar and frothy cap living on - looks great so far. It smells of bruised brown apples, oatmeal, white bread and grape skins, with suggestions of butterscotch, yeast and tropical fruit.
Fresh pressed apple cider and red apple sweetness throughout the sip, punctuated by hints of bready malt and oat sweetness. I'm getting hints of apricot and gooseberry as well, with apple cider/juice sugars lingering through the finish and into a slightly juicy, weirdly minty, persistent aftertaste. Medium-full in body, with low carbonation and a very soft, airy mouthfeel that I found to be one of the highlights of the session. Fair drinkability - this short can is easy enough to toss back, but I wouldn't want to drink this all night.
Final Grade: 3.42, a mediocre B-. Nickel Brook's Core Beliefs is not much of an IPA, and definitely not much of a cider - sort of a 'worst of both worlds' situation going on here. It's still waaay better than (and sort of in the same spirit as) their Green Apple Pilsner, a beer I haven't seen in a while, and never much cared for. Needless to say, this is not my jam and I doubt I'll buy this again: I mean, If I'm in the mood for a hoppy cider, I'll buy a hopped cider, but this crossbred compromise didn't do it for me.

Apple IPA. This beer is branded as a collab between a brewery and a cidery. The beer pours a hazy yellow colour, decent head. Bitter and hoppy nose. The taste is definitely a combo of beer and cider. My dislike of ciders overwhelms my love of IPAs. Not for me
