Saw the thread on this one, and was excited to come try this out. Found out shortly after I got there, that it was Royal Tanin Baum that I had at FoBAB. Sounds good, I liked that beer (at least the 3 oz pour I had).
A - A very great looking beer. A black body on the bar, very dark brown if held up to some light, with red shining through on the edges. Awesome fine bubble, off-white, two finger head that left intricate sheets and lace on the side. Don't know how you can improve on this.
S - A bit vinous in its qualities. Big tart and sweet smell followed by some tannic notes. Sour apples, grapes and some sugar and wood. It smells nice, but over-the-top sweet for me.
T - Explosive flavor. Highly tart transitioning to sugary sweetness, followed by a big souring. Highly acetic with a big bit of wood and wine quality from the barrels. The extreme acidity combined with a lot of sweetness make this one too rich and overpowering for my taste. Would not have called this one a Saison based on the taste.
M - This is a pretty hefty beer considering the style and ABV. Moderate carbonation with a very dry finish.
D - This is pretty good, but only in small doses. I could only drink half of my $10 (TEN? Wow) snifter and had to dump the rest in MasterSki's glass. It became much too sweet and started to hurt my stomach.

On tap into a tasting glass at GI...A dark brown pour with hints of amber, see through in spots. They need to change the name if its not black. A great off white head that lasts for several minutes, thick, full lacing. Looks great, bad name...An equally impressive aroma, so much going on in complimentary ways; red wine, oak, vanilla, grapes, lactic finish...The taste almost as good, vanilla, oaky red wine, hints of grape soda. Great carbonation and feel. Sour is an accept, crushable sour grape soda with an oak kick.
They got this sour right, go get some asap.

Had at Goose Island Clybourn Brew Pub. Poured into tulip glass.
A: Dark Brown with blackish hues and a soft mocha head with a solid lace that clings to glass.
S: Can you say red Bordeaux! Blackberry/ Saddle/ Cigar Box/ Cedar/ Apple Cider/
T: The tart blackberry comes through on the initial attack with the apple cider hitting you on the mid palate and finishing with saddle and wood. The finish is a little harsh for this beer as the saddle and wood do not fully integrate with the other flavor components causing the finish to be a little abrasive.
MF: A solid mouth feel. This beer coats the palate fairly well, however, I would have liked to seen a little more body.
D: Given the complexity of this beer it was a treat to drink, but I am not sure given the slightly harsh finish I would have many of these in a sitting. I would definitely seek this beer out, as its complexity is really thrilling.

Served on-tap at Goose Island Clybourn. Served in a tulip glass, for the low, low, price of $10(!).
A - Served with two fingers of tan foam that settles to a thick cap and glass-coating lace. Very, very, dark brown body that has some faint transparency at the fringes. As far as Dark Saison's got this is reference quality.
S - Sour grapes, lactic notes, a faint hint of salty play-doh yeast, and as it warms up more in the way of vinous notes and buttery oak.
T - Taste is a little less compelling. Starts with initial tart grapes, then transitions to sugary malt sweetness, and ends with a sour oaky finish. Complex, but I'm not sure the flavors work together perfectly. Certainly better than the base beer, Pepe Nero, as this has much less spice.
M - Surprisingly big body for 6.0%. Chewy and viscous to start, then dry and tannic in the finish. Low carbonation that might actually be too little for this sort of beer.
D - This started to hurt my stomach a little bit after a half-glass. I managed to finish 1.5 glasses of this (thanks to Mike dumping the other half of his serving into my glass). That being said, I was happy to try this, although I wouldn't rush out again for a second pour.

Color was an interesting deep brown/black with a hint of red tint. Thin ring of small bubbles around the edge of the glass, but not much head other than that, with some spotty lacing here and there.
Aroma & taste are very much dominated by tart/sour grapes with some earthy wood/wine flavors lingering underneath the tartness. Not much going on in the way of your typical typical saison flavors, but all in all a very tasty beer and something I'd drink again without hesitation.
The acidic/tart aspect does limit the drinkability a bit though as I can't imagine have more than one or two small glasses of this in a sitting. Medium bodied with some lively carbonation and a long, sour finish.
