Just found my notes on this beer from the Acre event last May where it was on tap.

This beer pours with minimal head and a red wine colored body. The aroma is quite acetic with lots of blackberries and a bit of tartness. Some oak and bourbon as well. The flavor had was more sour than bourbon with very good acetic tart sour with lots of blackberry. Mouthfeel was light and refreshing, but carbonation was a bit lower than I was expecting. Overall, I enjoyed this beer quite a bit.

I've had this a few times - but most recently was at South Loop Binny's. Served in a stange-like taster glass.

A - Served with minimal carboantion. Small wisp of bubbles quickly dissipates to nothing, leaving a largely transparent ruby-brown body.

S - Smells a lot like Dominique did - big bourbon and vanilla sweetness, but mixed with some tart berries and sharp acetic character as well.

T - Again, it's very easy to see the relationship with the base beer, as once one gets past the initial onslaught of tart berries and acetic acid there is a heavy does of vanilla and butterscotch mid-palate. A bit of funk in there as well, but quite low on the dial.

M - This keg was some what watery, with lower carbonation, and a sticky finish. This is quite a contrast to the base beer that I thought had somewhat harsh and prickly carbonation. Can't we find a middle ground? Medium bodied, with no alcohol to be found.

D - A definite improvement over the base beer in my book, but I like a lot of John's other creations significantly more, including the raspberry version of the same beer. Worth trying for sure, but too heavy on bourbon flavors for me to consume mass quantities.
