From 01/21/13 notes. Had this on tap at the Clybourn location.
a - Pours a somewhat clear yellow-orange color with two inches of slightly off white head and moderate carbonation evident.
s - Smells of yeast, wheat, corn, bready malts, and some spices. Not terrible but not really a ton going on here...a little bland.
t - Tastes of yeast, wheat, bready malts, floral hops, light citrus, spice, pepper, grains, and light fruits. Much better than the nose and a lot more going on here.
m - Medium body and moderate to high carbonation.
o - Overall a bit disappointing considering some of their other saisons. The nose is pretty bland and while the taste is a bit better, no real reason to get this one considering Sofie was on tap. Not a bad beer on it's own but not their best saison.

Served in a tulip.
A: Poured a soft, tangerine orange color, with a slight chill haze and about a 1/3 finger head. Looked good.
S: Damn near nothing. Maybe a tinge of citrus (orange and lemon) and some Belgian yeast.
T: Actually, I dug the pepperiness here. It cut through the Belgian funk that I tend to not like, but that is about all I liked about the flavor. Nothing really inspired here.
M: Quite boozy actually, which was surprising. Not sweet or fruity (coulda definitely used more), and with lots of lacing. Also, the beer was slightly flat carbonation-wise.
O: Yeah, some real problems here. I won't be getting this one again.

On tap at Goose Island Clybourn. Served in a sampler glass. Pours a golden-orange color with a good white head and some spotty lacing. Nose carries a bit of spice along with a touch of citrus. Nothing too complex. Flavor has a bit of pepper and earth along with mild citrus. Light body with high carbonation. Interesting and refreshing; no note of the 7%abv.

Finally, the end is nigh... This last saison o' the day pours a cloudy tawny-gold topped by a finger or so of white foam. The nose comprises orange zest, light lemon zest, coriander, clove, cardamom, light banana peel, grass, and a hint of brown sugar. Things seem decidedly fruity, but with enough spice to keep grounded. The taste continues this tradition, though with a minor vein of farmhouse-style wheat rocking throughout, mixing with the spices, making sure we know we're drinking a saison. The body is a light medium, with a light moderate carbonation and a smooth feel. Overall, the best of the day's saisons, one that finally figured out how to properly blend the citrus and spice and still include a touch o' the funk (not much, but there's a small enough quorum to make it work) to bring everything together. Good times.
