Stepan Timofeevich is the traditional St. Petersburg brand of kvass which appeared on the market of the Northwestern Region in 2004, one of the first brands of its kind. In the beginning, the brand was virtually not supported by ads, and the design remained the same since the days of its first appearance on the market.

In September 2009 Deka Company expanded its brand portfolio by purchasing Stepan Timofeevich brand, the second largest market player in St. Petersburg. The purchase of Stepan Timofeevich (TM) was a strategic move by the company to improve its leading position on the second largest national market of Russia. The trademark has earned considerable loyalty of consumers in the North-West of Russia.

A traditional Russian kvass. Invigorates and strengthens the immune system with useful microelements and enzymes that are beneficial for digestion. Deka Company has retained the old recipe and improved the taste of Petersburgers’ favorite kvass.

A thanks to the Czar of the Kvass kick, woodychandler, for this beer. Poured from a large, clear plastic bottle. Has a damn near black color with no head at all. Smell is full of dark bread, raisins, dates. Taste is identical to the smell, some molasses as well. Feels medium/full bodied in the mouth and overall is something I would drink more often if it were 5.0 % abv.

It seems as though, through better Internet translation guides & simple happenstance, that the Kvass Kvest is back in action! I was challenged over the weekend at a monthly bottle share & that has only strengthened my resolve. This 2L Bottle came from Bell's Market in PHL.

From the 2L plastic Bottle: Loads of Cyrillic!

I unscrewed the cap & kinda held my breath, hoping for the best. When nothing untoward occurred, I performed a slow, gentle pour into my awaiting souvenir Saint Petersburg glass. I did not get any head & it was more still than carbonated. The Kvasses all seem to vary on this point. Color was Dark Brown to Very Dark Brown (SRM = > 27, < 34), but its light permeability was limited. I got cola highlights especially at the edges, but it was not dark enough to be considered opaque. The nose was like a slightly-sour raisin bread dough. Would you make raisin bread using sourdough? I probably would not, but who knows … ? Mouthfeel was thin & watery as befits the style. The taste was very raisin-y, slightly sour, less clean than some commercial examples in my scope, but actually more appealing than something cloyingly sweet. Finish was semi-dry, slightly tart, very much of raisins & prunes. Hmm. I will grant you that this is not something for the uninitiated, nor is it something that the average Amerikanski is going to drink, but I revel in the unusual. YMMV.

Poured out as a cola brown color, pretty typical. The head comes and goes really quick and does even have as much of a head as some do. The smell is moderately sweet with plenty of earthy notes like molasses. The taste is a a little one dimensional, not overly flavorful in my opinon, a bit watered down also. The mouthfeel is watery and dry, very dry actually. Overall this isn't my favorite Kvass I've had.

Poured from 2 liter bottle into a dimpled mug.

Appearance: rich, dark brown with a clear body and a thin head of tan foam. Nice for the style.

Smell: rich and bready with a moderate sweetness and some light hints of molasses and raisin. I like the big bread component and, while it is a little sweet-smelling, it is on the drier side of kvasses I've had.

Taste: rich flavor with a fruity component of raisin, cherry and plum along with the bread character. Molasses flavors are more subdued here. I like it.

Mouthfeel: light bodied with a moderate carbonation. Not too bad.

Overall: a tasty and refreshing kvass. I'd definitely have this again.

Deka Brewery's Stepan Timofeevich

Typical appearance. It pours a dark chestnut brown body beneath a short head of white foam that fades almost immediately. Tiny spots of lace are left behind on the glass.

The nose is full of sweet molasses and juicy dark-skinned fruit. It's a little brighter than most examples.

The molasses really comes through in the flavor, perfectly balanced by the dark fruit (dates, raisins, fig). There's just enough sweetness, and just enough tartness to it. It finishes fairly dry, unlike many, with a lingering taste of soft rye bread.

Overall, it's not as complex as some (i.e. the fresh examples that still contain live yeast in the bottle), but neither is it as dull as some of the mass-market examples out there.
