Abbey style Tripel, fermented with Wild Yeast. 1/4 L in tulip glass. Slightly hazy honey color, dense 2 finger head. Smells very funky, sour and very similar to traditional Lambic's. Wow, incredible smell. Tastes very tart and sour yet light and dry, again like good Belgium Lambic's. I actually had to ask the bartender if she accidentally poured me from the wrong tap, nope, this is their Tripel. Not sure if this was what they were after but damn this is the closest I've ever had to a Belgium Lambic from a U.S. Brewer. If I were to rate this for style then it's 2.75 but as a American sour it's world class, 4.75. It's interesting how wild yeast can deliver such unique results. hope it is brewed again and the results are the same. KILLER STUFF!
